Heat oil in a pan and fry the sliced onions. When slightly brown add green chilli/ginger/garlic paste and saute
Add tomato and rest of vegetables (except cauliflower) and saute 5 mins
Add 1 cup water, salt, turmeric and close lid and let the veggies half cook. Now add cauliflower and let them cook fully.
Add ground coconut/cashew/saunf mixture and let boil for 5-10 mins, Garnish with coriander leaves and nuts
Note: You can use store bought coconut milk
