Cut up all the veggies the same size. First cook beans, then add carrots, then plantains, and then
eggplant and drumstick. While veggies are cooking, add turmeric and salt and cook on low heat.
Meanwhile blend coconut, cumin seeds, green chilies with a little water
In a bowl, mix yogurt, turmeric, salt, ground masala and mix well.
Add the mixed masala to veggies and cook for 10 min. Add some coconut oil
Separately fry mustard seeds, urad dal, curry leaves, and and add to avial.
